Pumpkin Cookies

pumpkin cookies These cookies are perfect for a harvest or Halloween party. They’re delicious, I promise the kids will scarf them up and ask for more.

~Pumpkin cookie recipe~

Cream together:

  • 1 cup of sugar
  • 1 cup canned pumpkin (not pumpkin pie mix)
  • 1/2 cup butter
  • 2 cups of flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt

Preheat the oven to 375.` Drop the dough by teaspoons on a cookie sheet sprayed with no stick cooking spray. Bake for 8 to 10 minutes, or until lightly brown. Ice with cream cheese icing.

Cream Cheese Icing

1 8 oz cream cheese

1/4 cup butter

1 cup confectioner’s sugar

1/2 tsp vanilla

Cream all the ingredients together, and spread it on the pumpkin cookies. Enjoy!

    these cookies are a little bland. They also took longer than the 8-10 minute baking time.
    I suggest adding some more cinnamon, a bit of nutmeg and maybe some walnuts or craisins. And bake them for 12-14 minutes.
    The texture was very nice though and not overly sweet, a good balance to the decadent cream cheese icing.
